Cooked about 2 hours, pic 1 is raw and pic is at the 1:45 mark while I was adding a apple cider vinager and oil mix.

What kind of wood you using?
I usually go with a 3-2-1 method or 2-2-1 depending on how hot the fire is. That is 3(or 2) hours uncovered, 2 hours foiled, then 1 hour uncovered to finish them off. It's basically foolproof, but I play around a lot, too.

Looks good. I never use sauce except for a little dipping, either.

I use an applewood rub that a local makes, I'll see if I can't get the ingredients for you. . But honestly I think just rubbing it with cavengers is close to as good as I've ever had.
