you checked into rehab and have been off the board. If not I'm smoking some picnics today for pulled pork.
No I did not lose a sig bet, but I am really really really ridiculously good looking.
2 hour update
Nice! Be sure to keep us updated. I haven't done pulled pork in a while.
I usually get mine to an internal temp of 200-205, wrap in foil and towels and put it in a cooler for a couple hours. It's still piping hot when it comes out, but seems to lock in some moisture. I always spritz mine with apple juice throughout to give it a nice crust and keep it moist.
I've been spritzing every hour with a mix of mojo, apple cider viniger and veg. Oil. How long do you usually cook for? I was thinking 10 hrs with 6 hours of smoke before wrapping?
I don't even know. I always just go by internal temp because I'm not good enough to be able to tell by feel. I never wrap it to go back on the smoker, but surely it wouldn't hurt.
I think I read that they don't even take on smoke after 3 or 4 hours, so that probably shouldn't be a concern, but I might be wrong on that.
Your right but it's on the higher end of 4 hours. They just slow down on takin the smoke so I think 6 hrs is the max they will receive smoke. You can even finish them in the oven after 6 hours of smoke. I figure once it reaches about 190 I'll take it away from heat since it will continue cooking
Hour 3, about 118 degrees. Temp is about 225 where the meat is.

What's your eating method? I usually go full Carolina style with pulled pork and put it on a hamburger bun with a little bbq sauce and cole slaw.
