I'll leave this here. It aired the other night and is right by my work. This guy is arguably the best pitmaster in the world right now. I go all the time, but he's going to be on Bourdain's show in a couple weeks and that will bring the crazies from all over and the line will get ridiculous. I'm not real happy about that. These are just the beef ribs. They're about a half pound a rib and absolutely incredible.
No bought em like that. Ended up using two different rubs...experimenting

Just a suggestion, even though you didn't ask, doing a whole packer is a lot easier and better. It looked like the first one you did was a packer, but it was hard to tell.

Yeah...the first was a packer with the right amount of fat. These were pre trimmed....live and learn
